Opening and closing rituals keep the house safe, clean, and ready. Never skip a step because the room looks fine.
Opening
- Unlock staff entrance and disable night alarm
- Walk the dining room for hazards
- Check restrooms and polish mirrors
- Light parlor lamps thirty minutes before service
- Confirm reservations printed for the floor lead
Closing
- Reset tables and restock side stations
- Secure cash drawer with dual sign-off
- Walk exterior lights and dock path
- Arm alarm and lock both entrances
Warning
Two people must verify the cash drawer. Solo closes are not allowed.
Alarm failure procedure
If the alarm fails to arm, call the overnight manager before leaving the property.
